PROJECT OVERVIEW
Our role was to build the financial model for this new catering business in Al Ain, focused on events, take away orders and flowers. In addition we were able to recruit the senior management team and liaise with the menu development alongside our culinary partners, Harris Aoki.
Our team developed the investment strategy with the goal of generating 20% ROI for the business by alingning on all levels.
CONCEPT
The project began with a strategic concept briefing to align with Carpe's brand vision, emphasizing its dedication to creating memorable experiences through an exquisite blend of florals and culinary craftsmanship.
Building on this foundation, a thorough analysis of market trends and competitor offerings was conducted, which helped shape the brand's distinctive approach to catering, floral design, and event planning.
The result: Carpe stands out as a premier service provider, offering a seamless fusion of fine dining and elegant floral arrangements. With a focus on delivering personalized and unforgettable moments, Carpe’s meticulous attention to detail ensures each event, whether intimate or grand, leaves a lasting impression across the UAE.
F&B Menu Development
Carpe's offering has been thoughfully crafted by the talented Harris Aoki team, helmed by Chef Ryan Harris and Shawn Aoki, industry veterans who've positively impacted several businesses in the GCC and beyond.
The menu boasts creative savory and sweet options alike, with signature dishes such as marble loaf cake, freshly baked nutella knots, churros, orange blossom croissants, tuna choux, house sliders and steak mushroom platters.
Kitchen Layout Advisory
Carpe is situated in a beautiful villa bag in the middle of Al Ain city. The layout has been carefully designed in order to maintain separation between the operations flow and customer flow as guests can enter from the front and be greeted by the designed facade first and flower shop as they enter; whereas there is a different access point for deliveries and services.
The kithcen layout has been designed to maximize both input and output, in order to cope with the market demand.
Financial Modelling
AP&Co. took charge of developing the financial model of the business by researching the market and understanding the feasibility of this venture within Al Ain.
We have succesfully implemented the creation of various cost and revenue centers, all of which have been translated into the POS and operations for a smooth flow and a realistic control over the numbers.
